Nicholas Pillai was born in moment of the food trade. His family runs a catering business with more than thirty years of culinary experience. Their list of food is only surpassed by major hotels and restaurants around Kuala Lumpur.
The co author of Healthy Eating – Recipes for the Asian Palate, a bestseller in Malaysia and Singapore since 2005, and this first book is the beginning of series which is published by Marshall Cavendish International. He is currently doing his PhD in Food and Culinary Management.
He specializes in a variety of foods ranging which is from local food to East and West Asia, and also European. His extended stay in Australia say him experiment with so many different cooking styles – ranging from Fijian underground cooking to Australian Aboriginal outdoor cooking to Asian and Western Cuisine.
He is a food writer, recipe contributor and food stylist for publications such as Her World, OH Magazine, Clove (A Star newspaper insert magazine) and websites such as Against The Grain and Pharmvision.com as well as the Malaysian Women’s Weekly. He has also written and provided recipes for magazines like Rasa, Nur, Majallah Midi Parenthink, Ibu dan Ayah and Traverama, Shape and other local lifestyle magazines.
His hands on cooking classes as well as his meticulous method of teaching will see the total amateur leaving his classes with skills to go as far as starting their own business. He covers many types of cuisines, pastries and the like. Many of his students have already embarked on their own business ventures.
He has appeared on TV, for cooking segments on NTV7 sponsored by Baba’s Curry Powders, as well as Health, Nutrition and Beauty Contest 2006. He completed a 13 episode health and beauty program featuring healthy food, working with OH magazine and Red Communications.
Nicholas was the Executive Chef of Holiday Villa Ampang and Director of Operations and Communications for Ipoh White Beans, a local Café franchise.
Nicholas also conducts product demonstrations for companies selling kitchen equipment. He currently does product demonstrations for Miele and Fujihome, and conducts corporate training classes with various companies in Kuala Lumpur, like Canon Malaysia, Schlumberger, Pfizer and Petronas.
Nicholas was awarded the prestigious Culinary Trust Award (International Association of Culinary Professionals) in 2006, which is a scholarship to pursue his Masters in Gastronomy Cordon Bleu at the University of Adelaide. He is the first Malaysian to be given this award and the only person in the world that year to receive the award. This foundation is based in Kentucky USA.
